1 ¼ cup almond flour (or whole wheat)
1/3 cup cricket powder
1 tsp cinnamon
½ tsp nutmeg
¼ tsp baking soda
3 eggs
¼ cup honey or maple syrup
2 tbsp melted coconut oil or butter
1 tsp vanilla extract
1 ½ cup grated carrots
¼ cup orange zest
Optional add-ins:
Walnuts
Raisins
Mix dry ingredients together and wet ingredients separately, then add them together. Mix well, add in carrots, zest and raisins and/or walnuts. Pour into a parchment-lined 8×8 dish. Bake at 350 degrees F for 25 minutes and you’ve got healthy cake for breakfast!
